Cafedeles.com. Cheese fondue is a legendary Swiss specialty. This legendary dish is usually served at large dining events to share with friends. Cheese fondue is a dish made from melted cheese, garlic, white wine, corn flour, and often mixed with kirsch (cherry brandy).

This legendary dish is served at the table in a special ceramic pot called a Caquelon, with a small stove underneath to keep the fondue at a constant temperature. To dip the bread into the cheese a long fork is used. Instead of taking a long time, let’s listen and practice at home.

Ingredients
 1 garlic clove, peeled and halved
 1 ¾ Generous 1 3/4 cups dry white wine
 5 5 Tbsp brandy
 14 14 oz. Gruyere cheese, grated
 7 7 oz. Emmental (or Swiss) cheese, grated
 3 ½ 3 1/2 oz. Parmesan cheese, grated
 2 2 tbsp cornstarch
 Pinch of freshly grated nutmeg
  Salt and Pepper to taste

Instructions

Rub the inside of a flameproof fondue pot with the garlic. Discard the garlic.

Pour in the wine and 3 tablespoons of the brandy, then transfer to the stove and bring to a gentle simmer over low heat.

Add a handful of grated cheese and stir constantly until melted. Continue to add the cheese gradually, stirring constantly until melted. Repeat until all the cheese has been added and stir until thoroughly melted and bubbling gently.

In a bowl, mix the cornstarch with the remaining brandy. Stir into the fondue and continue to stir for 3-4 minutes, or until thickened and bubbling. Stir in the nutmeg and season to taste. Transfer to fondue pot and a lit burner. Dip pieces of bread, veggies and fruit into cheese sauce.
